Mighty Gut Healthy Salad

This refreshingly light recipe features loads of good-for-your-gut ingredients like kefir, cucumber, sauerkraut, garlic tahini, and more that not only support a happy gut but also work together to help flatten your belly. Great for showing off your midsection this summer! 

Ingredients

  • 2 heads lacinato kale, shredded
  • 3 cups Brussels sprouts, shredded
  • 1 cup beet sauerkraut
  • 2 cups shredded carrots
  • 1 cucumber, sliced 

Dressing Ingredients

  • 1 cup plain kefir 
  • Juice of 3 lemons 
  • Dill, to your liking 
  • 2 Tbs tahini 
  • 2 cloves garlic
  • Salt and pepper, to taste 

Directions

  1. Combine salad in a large bowl. 
  2. Blend dressing in a blender or food processor.
  3. Store dressing in an air-tight container and dress salad when ready to eat.
