This refreshingly light recipe features loads of good-for-your-gut ingredients like kefir, cucumber, sauerkraut, garlic tahini, and more that not only support a happy gut but also work together to help flatten your belly. Great for showing off your midsection this summer!
- 2 heads lacinato kale, shredded
- 3 cups Brussels sprouts, shredded
- 1 cup beet sauerkraut
- 2 cups shredded carrots
- 1 cucumber, sliced
- 1 cup plain kefir
- Juice of 3 lemons
- Dill, to your liking
- 2 Tbs tahini
- 2 cloves garlic
- Salt and pepper, to taste
- Combine salad in a large bowl.
- Blend dressing in a blender or food processor.
- Store dressing in an air-tight container and dress salad when ready to eat.
