Apple Bacon Protein Pancakes

Pancakes:
1 cup brown rice flour
5 egg whites
1 egg
1 teaspoon Flavorgod Bacon Lovers
1 scoop caramel pretzel pro7ein protein powder  @nutrishopdublin & @nutrishopusa
1/2 cup organic unsweetened apple sauce
1/4 cup almond milk
1 tablespoon honey
1⁄4 teaspoon baking soda
1 teaspoon ground cinnamon
1 tablespoon coconut oil
2 strips cooked uncured apple smoked bacon, chopped (optional for garnish)

Topping:
2 cups red apples, sliced
1 tablespoon coconut oil
2 tablespoons honey
1⁄4 cup organic maple syrup

Directions:
Whisk all pancake ingredients together until no lumps remain. Heat a skillet or griddle to medium heat and spray with coconut oil. Drop the batter by 1/3 cups full onto the skillet. Cook for 2 minutes per side, until golden brown, then flip.

Add coconut oil to a heated skillet. Add apples and remaining topping ingredients. Simmer on medium for 10-15 minutes or until apples are tender.
Serve hot, top with caramelized apples and syrup, bacon and enjoy!
